Hello Everyone,

Still here hanging out in Naray, at the base of the Hindu Kush mountains. Snow has already formed on most of the mountain passes up here, so we will be heading to the southern passes with Pakistan. In any case, here at the firebase, we had a bread hut built, because our soldiers have bread with every meal. I went there today to check it out, and it reminded of working in an Italian restaurant in New Jersey when I was young. This is really similar to a pizza making operation. You'll see

Kiln

Here is the bread kiln from the outside, made of brick and adobe.

Here it is from the inside. First they make a huge fire in it to get the adobe nice and hot. Notice the chimney is just a hole in the roof.

Sal and Vinny

Here are Sal and Vinny--the two bread makers. With a huge chunk of dough behind them.

Vinny flops it around like a pizza crust and lays it on a pillow.

Then he uses the pillow to slam the bread up against the inner walls of the oven.

Stick it in the oven

Finally, he takes out the bread using metal tongs.

Pull that sucker out

The bread is called NAN, but it is not exactly like Indian NAN. It is a little crisper.
In any case, I thought it was cool.

Afterthought: I think that the Afghan bread is the only thing that many American Soldiers liked about Afghanistan.
